Sweet Yam Cream Soup

Ingredients: For 4 servings
5.3 oz. Japanese Sweet Yam
1/2 Onion
2 batch Spinach
1 tbsp. Soup Stock
1 tbsp. Flour
1 tbsp. Olive Oil
10 oz. Water
10 oz. Milk
Salt & Pepper


1. Wash sweet yam with skin, cut bite-sized portions and soak in water. Slice onion into thin wedges, rinse spinach and cut into 2.5" portions.
2. Heat olive oil in a pot and sauté onion until transparent.
3. Add flour and sauté together until well blended with onion.
4. Mix soup stock with water and pour into the pot slowly. Add sweet yam and cook for 15 minutes over low heat.
5. Add milk and spinach and bring it to boil.
6. Sprinkle salt and pepper t taste and enjoy!!
