Simmered Bitter-Sweet Burdock w/ Pork

Ingredients

Ingredients: For 4 servings
2 Burdock (Gobo)
7 oz. Pork Belly
1 pack Shimeji Mushroom
1 tbsp. Olive Oil
3 tbsp. Soy Sauce
2 tbsp. Sugar
2 tbsp. Mirin
2 cups Water
Green Onion, White Sesame as needed

Preparation

1. Rinse burdock and peel with back of the knife, cut 2" long portions and cut in half lengthwise. Then soak in water for 20 minutes.
2. Cut green onion 1" long portions, remove the base of shiemeji mushroom and rinse lightly.
3. Heat olive oil in a pot and sauté pork over medium heat, when it changed color add burdock and shimeji mushroom and sauté together.
4. Add water and cook over high heat. Remove scum and add soy sauce, sugar, mirin and cook over medium heat until the liquid is gone.
5. Add green onion and heat briefly then arrange on a plate.
6. Sprinkle white sesame and enjoy!.
