Simmered Baby Octopus

Ingredients: For 4 servings
12 pcs. Baby Octopus
4 Tara Sataimo
7 oz. Lotus Root
Snow Peas as needed
2.5 cups Soup Stock (Dashi Soup)
6 tbsp. Mirin
4 tbsp. Sake
4 tbsp. SugarV 4 tbsp. Soy Sauce
Shredded Ginger, Salt as needed


1. Cut line the base of the body of a baby octopus. Turn the body inside out and remove the beak, the eyes and the ink sack. Turn the body right side out again.
2. Put octopus and salt in a ball and rub softly and rinse with water and drain.
3. Peel taro satoimo and rub with salt and boil briefly.
4. Peel lotus root and cut coarsely. Let soak in water.
5. Cut snow peas in half.
6. Put soup stock, mirin, sake, sugar, soy sauce and shredded ginger in a pot and boil, then ass octopus and cook for a few minutes and take them out.
7. Add taro satoimo and lotus root and cook for 15 minutes, add octopus and simmer for 15 minutes under low heat.
8. Add snow peas and enjoy!
