Pumpkin & Hijiki Croquette

Ingredients: For 4 servings
1.7 lb. Pumpkin
1.5 tbsp. Dried Hijiki
5 oz. Ground Beef
2 tbsp. Soy Sauce
1 tbsp. Sake
2 tbsp. Mirin
2 tbsp. Sugar
1 tbsp. Powder Soup Stock
1 Egg
Flour as needed
Bread Crumbs as needed
Olive Oil as needed


1. Rehydrate the hijiki in water for 15 - 20 minutes, rinse it, drain of excess water.
2. Remove the seeds from pumpkin and peel the skin randomly, and cut into 1" or 1.5" pleces.
3. Put water (1.5 cup), pumpkin, hijiki, sugar, soy sauce, sake, powder soup stock, mirin and cook over medium heat until the liquid almost gone. Then drain of excess liquid and let it cool.
4. Put1 tbsp. olive oil in a pan and sauté ground beef, then drain of excess oil.
5. Put pumpkin, hijiki in a bowl and mush pumpkin well. Divide into small portions and shape each portion into desired shape.
6. Coat with flour and water-added beaten egg, and bread crumbs. Deep fry with 350F olive oil until lightly browned and enjoy!
