Mashed Tofu Salada w/ Avocado & Cream Cheese

Ingredients: For 4 servings
1/2 Firm Tofu
8 shelled Shrimp
0.7 oz. Edamame
1 Avocado
0.7 oz. Corn
1.7 oz. Cream cheese
2 tbsp. Mayonnaise
1 tbsp. Squeezed Lemon
1.5 tbsp. Sugar
2 tbsp. Soy Sauce
3 tbsp. White Sesame
Salt & Pepper as desired


1. Drain the tofu and wrap in paper towels to absorb excess water.
2. Boil shrimp and cut into bite size pieces. Peel avocado and cut into bite size pieces and sprinkle lemon juice.
3. Mix tofu, mayonnaise, cream cheese, white sesame, sugar and soy sauce until the tofu is well mashed.
4. Add shrimp, edamame, avocado and corn and mix together. Season with salt and pepper and enjoy!
