Curried Rice With Summer Vegetables

Ingredients : For 4 servings
0.5 lb. Ground Beef & Pork
1 Eggplant
1/2 Onion
1/2 Bell Pepper
1/2 Red Paprika
10 Shishito Pepper
2 Tomato
2 cloves Shredded Garlic
1 tbsp. Shredded Ginger
3 tbsp. Worcester Sauce
2 tbsp. Ketchup
1 tbsp. Olive Oil
Salt & Pepper as desired


1. Cut onion into thin slices and cut eggplant, bell pepper, red paprika into 0.5" cubes. Cut Shishito pepper in half.
2. Heat olive oil in a pan and saute garlic ang ginger, add onion and saute until soft.
3. Add ground meat and cook until change its color. Put curry powder, salt & pepper and mix well. Add tomato, eggplant, bell pepper
red paprika and shishito pepper and saute all together.
4. Put worceter sauce, ketchup, salt and pepper as your desired.
5. Arrange rice and curry in a plate and enjoy!
