Cold Udon

Ingredients: For 4 servings
4 frozen Sanuki udon noodles
1/4lb Ham
1 Cucumber
1 Tomato
3 egg
Nori (dried seaweed)
1/2 cup soup base
1 cup water


Preparation 1. Make 4 thin crepes-like omelets. 2. Cut omelets, ham, cucumbers, and tomato into thin strips. 3. Place frozen noodles into boiling water and cook for 2 minutes. 4. Drain and cool the noodles in ice water before putting chilled noodles into individual plates. 5. Place cucumber, ham and egg strips on the noodles. 6. Pour dressing over noodles just before serving and garnish with nori seaweed.
