Simmered Bamboo Shoot & Deep-fried Tofu

Ingredients: For 4 servings
10 oz. boiled Bamboo Shoot
2 pcs. Deep-fried Tofu
0.5 lb. Chicken thigh
Ginger as needed
Leaf Bud as needed
2 cups. Soup Stock
3 tbs. Soy Sauce
3 tbs. Sake
3 tbs. Mirin
1 tbs. Sugar


1. Cut ear of bamboo shoot straight into 2” portions and slice other portion of bamboo shoot into 0.5” half-moon pieces. Cut deep-fried tofu into 0.2” portions and cut ginger into strips.
2. Cut chicken thigh into bite-size pieces.
3. Put soup stock, soy sauce, sake, mirin, sugar in a pan and boil. Add bamboo shoot, deep-fried tofu, chicken and cover over medium heat. When boiled, cover with a drop lid and cook over medium-low heat until almost no liquid remains in the pan.
4. Garnish leaf bud and enjoy!
