Fried Mackerel with mizore-an (grated daikon radish sauce)

Ingredients: For 4 servings
2 Mackerel fillet
2 tbs. Ginger juice
1tbs. Soy Sauce
2 cups grated Daikon Radish
5-6 Green Onion
1/2 Carrot
1 cup Soup Stock
1/2 tbs. salt
2 tbs. Mirin
2 tbs. Soy Sauce
1 tbs. Starch
Oil as needed


1. Remove small bones in a mackerel cut into 1" portions. dress with ginger juice and soy sauce.
2. Drain grated daikon radish in a strainer. Slice green onion into circles and cut carrot into very thin strips.
3. Mix starch with water (2tbs.).
4. Dredge mackerel in starch and fry with 350F oil until crisp.
5. Put soup stock, salt, mirin, and soy sauce in a pan and cook and add thickness with starch with water. Add grated daikon and carrot and cook shortly.
6. Place mackerel in a serving dish and put sauce (Step. 5) on it and sprinkle green onion.
