Grapefruit Pudding

Ingredients: For 4 servings
1 Grapefruit
0.2 oz. Sugar
5 oz. Milk
1 Yolk
1 whole Egg
1.5 oz. granulated Sugar
3.5 oz. Fresh Cream
2 oz. granulated Sugar
1.7 oz. hot Water
Vanilla flavoring as needed


1. Peel grapefruit and separate into sections.
2. Put milk, vanilla flavoring, and the pith (white fluffy stuff) around a grapefruit in a pot, then confit it for 1 hour.
3. Heat the pot. After it has boiled keep cooking on a low heat for 1 minute, then take out the pith.
4. Put yolk, whole egg, granulated sugar, fresh cream, and (Step. 3) in a bowl and mix them, then pour into pudding cups.
5. Put pudding cups in a hot water (104F-140F) and bake in an oven with 320F heat for 30-35 minutes. Then cool in a refrigerator.
6. Put granulated sugar in a pot and sear until brown, then add hot water and keep cooking for 1-2 minutes. Remove from the heat and let cool.
7. Garnish grapefruit and pour caramel and enjoy!
