Shrimp & Tomato Salad

Ingredients: For 4 servings
7 oz. Shrimp
2 tbs. White Wine
1/4 tsp. Salt
Pepper as needed
1 slice Lemon
2 Tomatoes
50g Green Beans
1/2 Onion
1/2tsp. Salt
1/2cup Wine Vinegar
1 tsp. Mustard
2 tsp. chopped Onion
2 cloves chopped Japanese Ginger
5 pcs. chopped Shiso
1/2cup Olive Oil

Preparation

1. Remove back veins from shrimp. Cook shrimp with a little water, white wine, salt, pepper and lemon in a covered pot until the steam comes out. Then peel it after it gets a little cooler.
2. Cut tomato into 8 equal wedges and peel the skin off.
3. Remove the strings from green beans and cut into 1” pieces and boil it, then salt and pepper to taste. Slice onion and immerse in water for a while and drain off.
4. Put salt, wine vinegar, and mustard in a bowl and mix well, add chopped onion, Japanese ginger, shiso, and olive oil and mix well again to make dressing.
5. Arrange tomato, green beans, sliced onion, shrimp and put dressing on it, garnish chopped shiso then enjoy!
