Fried Saury with Salted Plum

Ingredients

Ingredients: For 4 servings
8 pcs. Filleted Saury
8 pcs. Ooba (Japanese Basil)
1 tbs. shredded Ginger
4 pcs. Umeboshi (salted Plum)
4.5 oz. Soy Sauce
4 tbs. cooking Sake
2 tbs. Mirin
1 tbs. Sugar
Flour (Starch) as needed
Cooking Oil as needed

Preparation

1. Take out seed from umeboshi and chop them.
2. Mix well with soy sauce, cooking sake, mirin, sugar, ginger, and umeboshi (Step. 1) and marinate saury in it for 1 hour.
3. Place umeboshi (Step. 2) in center of saury add roll up then dredge in flour and attach with toothpick.
4. Fry saury in cooking oil for 3-4 minutes at 350F.
5. Arrange saury on the ooba and enjoy!
