Sweet Potato Cupcake

Ingredients: For 4 servings
1.5 oz. Sweet Potato
1 Egg
3.5 oz. Pancake Mix
1 ½ tbs. Milk
1/2 tbs. Mirin
1/2 tbs. Cooking Oil


1. Cut sweet potato into 0.4” squares and soak in water for 10 minutes and drain off.
2. Put sweet potato into microwave-safe bowl and cover the bowl with plastic wrap, then heat up in a microwave for 50 seconds (600w). When it cools, sprinkle mirin over it.
3. Beat an egg and add milk, cooking oil, and pancake mix and mix well.
4. Add sweet potato and mix together.
5. Fill each cup about 2/3 full. Bring water in the bottom of a steamer to boil first, then place cups in the steamer and cook for 7 minutes.
