Deep-fried Bonito w/ Garlic

Ingredients: For 4 servings
10 oz. Bonito
5 cloves Garlic
5 Asparagus
1/2 Lemon
2 tbs. Squeeze of a Ginger
3 tbs. Soy Sauce
2 tbs. Sake
2 tbs. Mirin
1/2 tbs. Salt
1 tbs. Sugar
2/3 cup Starch
Fried Oil as needed
Ponzu as needed


1. Cut bonito into 0.4" portions and sprinkle salt. Mix soy sauce, squeeze of ginger, sake, mirin, sugar, and grated 1 clove garlic well. Dip bonito in it for about 10 minutes.
2. Cut asparagus into 2" long portions and boil briefly and salt to taste. Cut lemon into wedges.
3. Slice garlic thin end deep-fry until crisp.
4. Wipe excess sauce from bonito and coat with starch, then deep-fry with 350F oil.
5. Arrange bonito, sprinkle fried garlic and garnish asparagus and lemon. Enjoy with ponzu!!
