Simmered Squid with Lotus Root

Ingredients: For 4 servings
2 Squid
0.7 lb. Lotus Root
3 Taro Satoimo
1 Chili Pepper
3 tbs. Soy Sauce
2 tbs. Sake
2 tbs. Mirin
2 tbs. Sugar
Oil as needed
Vinegar as needed

Preparation

1. Peel lotus root and cut into 1/4" round slices. Immerse in water with vinegar and drain. Peel taro and cut coarsely then boil lightly.
2. Put fingers in the stomach and pull the head and the guts out slowly. Remove the soft bone from the body part and rinse inside of squid body. Cut into 1/2" rings and cut legs into 2 legs each portions.
3. Cut chili pepper into rings.
4. Heat oil in a pan, sauté squid and lotus root for 2-3 minutes.
5. Add taro and put sugar, sake, mirin, soy sauce and sprinkle chili pepper. Simmer for 10 minutes with a lid.
6. Arrange in a serving dish and garnish your favorite greens.
